We produce models of sweet and bitter compounds to classify these molecules concerning random choice ones and vis-à-vis each other (i.e., sweet vs. bitter). We plan to screen databases of food constituents and others to discover novel sugar substitutes with minimal off taste and bitterness. An initial experimental setup has already been planned in collaboration with the Technion-Haifa.
